Braised vension tacos are simple to throw together and can all be done in a crockpot. The venison can be substituted for most game including wild hogs, black bear, and elk. This dish can also be done with loins or steaks quickly grilled or seared to a rare- medium rare similar to Carne Asada

3 ancho chilis
3 chipolte chilis
1 onion
1 head garlic
2 T Tomato paste
1 cup beef stock
1 t cumin
1 T oregano
1 bay leaf
Salt and pepper
Cotija chese
Cilantro
Corn tortillas, lightly charred over flame
First and foremost season the venison, then sear it on high heat and set aside
Put your chilies, garlic, chili paste, half the onion, beef stock, cumin, oregano, and tomato paste into a blender and blend until smooth
Place your venison and your mixture in a pot or crockpot on 350° for 3-4 hours or until fork tender
While your deer is cooking rough chop the cilantro, dice onions, and crumble cotija cheese
Once ready remove venison pick apart and placed back in the liquid.
Last but not least build your taco, with a fork full of braised meat sprinkle some fresh white onion, cilantro and crumbled Cotija over the top and enjoy (can and should eat with hot sauce or a simple salsa)
